Three meals per day are provided at iSPiiCE base camp; breakfast, lunch and dinner. Kitchen facilities may be used for preparing snacks and making tea or coffee throughout the day.

 

Authentic Indian Dishes

Meals are cooked by our own amazing chef- Neeraj, who isiSPiiCE Volunteer India local to the area. Neeraj has worked in different parts of India and has picked up different techniques from working in restaurant kitchens in the north and south of the country. Neeraj specialises in north Indian cooking and the weekly menu consists of regional Himachali dishes and north Indian cuisine.  This includes a lot of lentil, pulse, rice and mixed vegetable dishes. One or two vegetarian dishes along with rice or flat bread would be a typical evening dinner, self-serviced to allow for individual choice. Meat dishes (chicken, lamb or goat) are prepared as part of the weekly menu in addition to vegetarian dishes. Meal ingredients are bought fresh locally and therefore subject to seasonal change.

Whilst using Indian flavours and ingredients, dishes are not made too spicy and the chef will be guided by the preferences of volunteers. Additional chillies are available for those who do like it hot.

Volunteers are welcomed to help out with the preparation of food in the evenings.  This helps you learn authentic Indian cooking and dishes which can be taken home to impress friends and family when you return! Western style food such as pasta can also be added to the weekly menu and volunteers may even have a go at cooking for the group some evenings and share cuisine from their own countries.

Allergies and food intolerances

iSPiiCE cater to special dietary requirements including intolerances and allergies. Vegetarians and vegans are also well catered for and vegetarian/vegan dishes will be served at each meal time.  Volunteers should notify iSPiiCE upon booking if they have any special dietary requirements and any specific dishes and ingredients can be discussed with iSPiiCE chef upon arrival.

Dining outside of iSPiiCE base camp arrangements is not included in the program cost however volunteers are free to visit local restaurants at their own choice. Restaurant meal charges are relatively cheap and offer good choice including Indian, Tibetan and Western menus.
